Why yes, those bars are gluten-free peanut butter rice krispie treat-like with chocolate chips on top! Which is what I had to do to camouflage some puffed rice cereal that was just not cutting it. I’ll save the “Why do normal Rice Krispies have to be made with barley malt?” discussion for another day, as there are tons of gluten-free puffed rice options out there. It’s just that none of them are very good.
So I’m wondering why I brought these all the way back from Paris –
when I knew they also were barely so-so. I think it was that bug making the crazy eyes at me.
But this is why god made rice krispie treats and had the good sense to add a peanut butter option, people. To dress up the boring! Which is exactly what I did in like five minutes last night. Five minutes at night = a weekend worth of deliciousness. That’s what I call max efficiency. And ohmylord, the smell of peanut butter and marshmallow is intoxicating. Or I just need to get out more. And no, I was not satisfied with only the peanut butter and instead threw some chocolate atop. That’s how flavorless those Riz things were.

Gluten-Free Peanut Butter Rice Krispie Treats
Do you need this recipe, really? Okay.
Prep time: 2 minutes Cook time: 7 minutes
Ingredients
3 Tablespoons butter
1/2 cup peanut butter
3/4 bag of large marshmallows
5 cups gluten-free puffed rice cereal
1/4 cup chocolate chips
1. Melt butter over medium heat. Add marshmallows and stir until completely smooth.
2. Add peanut butter and remove from heat. Mix well. Add gluten-free rice cereal and mix well.
3. Transfer to 9″ square greased pan. Cover with chocolate chips.
4. Allow to cool for at least a half hour. Cut into squares and serve.
Makes: 16 bars

Oh YUM! I really miss rice crispy treats! I wish we could do marshmallows but one of our many intolerances here is corn. And with all the other intolerances we have, I have more necessary things to make from scratch so homemade marshmallows get pushed down the list. I might have to push it back up the list soon though! I’m sure my 6yo would be pleased. lol
Another alternative to dress up your puffed rice cereal… A friend of mine gave me a recipe she uses with puffed rice, which I tried with puffed millet since we can’t do rice either. (Turns out the puffed millet wasn’t GF so don’t get it!) But, you could use this recipe with any GF puffed cereal. It’s reeaally good! I most recently used this recipe with Enjoy Life’s Crunchy Flax cereal. It works, but the cereal has a stronger flavor than either the millet or rice, so I’m thinking maybe adding some peanut butter and chocolate to it next time. 😉

the gf rice krispies are yummy; they taste just the same!! and also, i’ve made rice krispies treats with cinnamon chex – and they were amazing.
I just read this, my kid loves cinnamon chex! Thanks for the great idea.

Oh, how I love rice krispie treats! Rice krispie treats were the first thing I learned to “bake” and it’s just plain sad to me why the gf cereal version has no taste. Peanut butter is a brilliant addition, except my four year old hates it, abnormal, I know. But I could always make it for myself, ha.
