I know. I didn’t believe it either. I’m a real cow milk ice cream kind of gal, but I know it’s not the best thing for SO MANY people, and probably not me. But until I get a diagnosis of “ice cream will kill you” I’m thinking I’ll stick to full cow and sick it out on occasion. I know how dumb that sounds.
Anyway, that was not my point. My point is, there are a lot of dairy-free ice cream substitutes and a heck of a lot of them kind of suck it. But this one? This cashew milk situation is off the hook.
So Delicious sent me all of that ice cream above, and I had no choice but to dig in. And it’s delish, as advertised, my friends. The Cappuccino, especially. As a celiac I also appreciate the gluten-free options on top of the dairy-free. I need all of that, and a lot of you peeps do too. So, score.
What’s up with the cashew and it’s dairy-making abilities? I’m wondering why cashew milk, cashew cheese and now, cashew ice cream is such a great alternative if you must go there. Any food scientists out there want to weigh in?
I was also recently told how easy it is to make cashew milk, which is exciting as well. Apparently you just add water and blend. No filtering is necessary, you’re good to go. Which makes me think that at some point I’m going to make it up my own damn self and hey, maybe even try some ice cream makin’ at the same time. Stay tuned for that, people.
