Happy minty holidays, everybody! I cannot stop eating these gluten-free cookies made with chocolate mint chips. In fact, I’m eating one right now. THAT IS A TOTALLY TRUE STATEMENT.
A tip for best cookie making. Use a gluten-free, all-purpose flour that includes xanathan gum. Go for the expensive stuff since there is so much of it in this recipe. Use a bigger bowl than I did when mixing and get your cookie on.
