Tonight begins the festival of lights, where the Jewish people celebrate the rededication of the second temple in Jerusalem, play some dreidel, eat some latkes, light the menorah, and basically join together to say, “Yo, we’re still here!”

I like to add a little brown rice flour to the mix before frying; I find it helps the latkes hold together a little better. Thanks, and Happy Hanukkah!
